This by far was the easiest vegan dish I have ever made. It pretty much just came from hunger and impatience, but ended up being one tasty soup!!
1 cup peas (I used canned)
1/2 cup unsweetened cashew milk
Place peas and cashew milk into the blender. Blend. Put soup into a pan on the stove and simmer for about five minutes, stirring constantly.
an interesting note- peas are rich in protein, folic acid, vitamin c and vitamin k.
